For the right cutter, the Moto chopper is your dream. The shear eliminates a closed loop on the thumb, which means you have total freedom and flexibility when cutting.

It does take a certain level of technique and understanding to be able to harness the full command of the chopper, but if it bonds with you it can be a perfect fit.

Sometimes a 7 inch blade or something longer can be overwhelming, so the 6 inch Moto chopper can be the easiest and most familiar place to start when adjusting to the cutting technique.
